How To Make Healthy  Broccoli Egg Bhurji Recipe

A classic egg bhurji with a healthy twist of crunchy broccoli added to it makes a perfect side dish with your main course meal or even with some toasted pav buns for breakfast. When we love to cook, we often experiment with different dishes in our kitchen. The egg is one such versatile food that can be paired with any vegetable and a delicious recipe can be prepared. Broccoli Egg Bhurji is one such recipe, which is a combination of scrambled eggs and broccoli. This recipe is perfect for the days when you are tired after a busy day and don’t want to eat outside.

Did you know that broccoli is a vegetable that is packed with essential nutrients, it has high levels of fiber, and it has a rich source of vitamin C, vitamin A, iron, vitamin K, B-complex vitamins, zinc, phosphorus, and phytonutrients. Research says that phytonutrients are compounds that lower the risk of developing diabetes, heart disease, and certain cancers.

Serve Broccoli Egg Bhurji with Whole Wheat Lachha Parathas and Lauki Raita for weekday lunch or you can have it with toast for breakfast.

INGREDIENTS

  • 3 Whole Egg
  • 1 cup Broccoli, florets, chopped into small pieces
  • 2 Onion, finely chopped
  • 2 Tomatoes, finely chopped
  • 6 Garlic, cloves, finely chopped
  • 1 teaspoon Turmeric powder (Haldi)
  • 2 teaspoon Red Chilli powder
  • 2 tablespoon Coriander (Dhania) Leaves, finely chopped
  • Salt, to taste
  • 2 tablespoon Oil

INSTRUCTIONS

  1. To begin making Broccoli Egg Bhurji, heat oil in a frying pan and add finely chopped onions.
  2. When the onion turns pinkish, add chopped garlic and sauté till the raw smell of garlic goes away.
  3. Once it is done, add the chopped tomatoes and sauté till it turns mushy.
  4. Add broccoli florets and cook them for 10 minutes. After 10 minutes, add turmeric powder, red chili powder, and salt and mix everything well
  5. One by one break the eggs directly into the skillet. Mix well and wait for the eggs to cook.
  6. Once you see the eggs getting cooked, take a spatula and scramble it in the skillet.
  7. Scramble continuously till the eggs are finely minced and mixed well with the onion-tomato-broccoli mixture.
  8. Adjust salt according to your taste and garnish with chopped coriander leaves and again mix well. Switch off the gas and serve hot.
