Sweet Potato & Chickpea Power Bowl

Calories: ~320 per serving

Ingredients:

  • ½ cup roasted chickpeas (or canned, drained)
  • ½ small sweet potato (cubed, roasted or microwaved)
  • 1 tbsp olive oil
  • ½ tsp paprika or cumin
  • 1 cup spinach or kale
  • 1 tbsp lemon juice

Instructions:

  1. Toss chickpeas and sweet potato in olive oil and spices.
  2. Roast in an air fryer or oven (or pan-fry for 5 min).
