Indian-Style Veg Salad (Kachumber Salad)

Ingredients (Serves 2-3):

• 1 cucumber – finely chopped
• 1-2 tomatoes – finely chopped
• 1 small onion – finely chopped
• 1 carrot – grated or finely chopped
• 1 green chili – finely chopped (optional, for spice)
• 1 tbsp fresh coriander leaves – chopped
• Juice of 1 lemon
• Salt – to taste
• 1/2 tsp black pepper
• 1/2 tsp chaat masala
• 1/4 tsp roasted cumin powder (jeera powder)

• Boiled moong sprouts or kala chana
• Pomegranate seeds (for sweetness)
• Grated beetroot (for color and nutrition)

1. Chop all the vegetables finely and place them in a mixing bowl.
2. Add salt, black pepper, chaat masala, and roasted cumin powder.
3. Squeeze in the lemon juice and mix everything well.
4. Garnish with fresh coriander leaves.
5. Serve immediately as a side dish or light snack.
