Barnyard Millet has the highest dietary fiber and iron content compared to all other millets and cereals like rice and wheat.

This dish is ideally be consumed during the winter season.

Ingredients:-

1.Barnyard millet (Samak) Rice -1/2 cup

2. Cumin seeds -1/4 tsp

3.Cloves- 2

4.Black peppercorn -3

5.Cardamom, green- 2

6.Peanuts, roasted-1/2 tbsp

7.Ginger, minced -1/4 tsp

8.Green chilli-1

9.Potato, boiled-1/2 cup

10.Desi ghee-1 tbsp

11.Rock salt (sendha namak)-to taste

12.Cashews, roasted-10

13.Coriander leaves, chopped-1 tbsp

14.Lime juice-1 tsp

Serving Size: 1 Bowl

Procedure:-

1.wash and soak sama rice or Barnyard millet for 30 minutes

1.Place a pan on medium heat and pour ghee into the pan.

2.Once the ghee heats up, toss in cumin seeds, cloves, black peppercorns, and green cardamom pods, and stir.

3.Now Add roasted peanuts, minced ginger, and green chillies. Sauté for 30 seconds.

4.Now add boiled potato, and cook for about 1 minute.

5.Add sama rice /Barnyard Millet (and stir to coat well with ghee and spices, about 3 minutes.

6.Pour in 300 ml (1¼ cups) water, add rock salt (sendha namak), stir, then cover and cook till the water is absorbed, 4 to 5 minutes.

7.Use a fork to fluff the rice.

8.Add fried cashew nuts, coriander leaves, and lime juice.

9.mix the upma properly and then remove from heat.

10.Transfer to a serving bowl and serve hot

  • Rice – 1 tbsp
  • Toor dal – 2 tbsp
  • Ginger – 1/2 inch
  • Green chilli – adjust to taste
  • Coriander leaves – 1 tsp
  • Curry leaves 4-5
  • Cumin seeds – 1/2 tbsp
  • Mustard seeds – 1/2 tsp
  • Coconut fresh grated – 2 tsp
  • Turmeric – 1/4 tsp
  • Curd/buttermilk – 1 cup
  • Dry red chilli – 2 cracked
  • Veggies – 1 cup (okra, tomato, brinjal) add as per choice.
  • Oil – 1 tbsp
  • Salt to taste

Method:-

  • To prepare dal rice paste: Take a mixer jar, add soaked dal and rice, green chilies, grated coconut and cumin seeds, coriander leaves, turmeric and ginger. Add a little water and blend till it become smooth paste. Keep it aside.
  • For cooking: Heat some oil in a pan, add all the chopped vegetables(except tomato), turmeric powder. Now, add some water and cover it. Let them cook 4-5 min on a medium flame or till all vegetables cook well. And keep veggies aside for a while.
  • To make the curry base: Take a mixing bowl, whisk the yogurt or buttermilk until smooth. Now, heat some oil in a kadhai or wok. Add mustard seeds, curry leaves and let it splutter. After that add dal rice paste in kadhai and mix all together well.
  • Now, add whisked curd/buttermilk into the kadhai. Combine the curd and mixture together as a base. After wards, add all cooked vegetables together along with chopped tomato. Let all material cook for about 3-4 min.

Your South Indian Traditional Mor Kulambu Curry/Buttermilk Curry is ready. Serve hot with rice or roti and enjoy the flavor of south Indian cuisine.

  1. Wash and soak Little Millet/ Samai in enough water for 2-3 hours.
  2. Drain all the water and grind it along with grated coconut and a little salt.
  3. First grind little millet and coconut to a coarse paste without adding water and then add 1 cup of water to make a smooth paste.
  4. Check the batter and grind it again adding the required water to get a very smooth paste without any grits
  5. Heat the dosa pan well.
  6. Keep the flame high.
  7. Pour enough batter to cover the pan
  8. Turn the pan around quickly so the mixture coats the bottom well without any holes.
  9. Now simmer the flame completely and close the dosa with a lid.
  10. Let it cook for 30 seconds,Then remove the lid and again cook in an open pan for another 30 seconds.
  11. When the edges start lifting, dribble a few drops of oil around and ease the dosa out of the pan.
  12. Now, serve the little millet dosa along with chutney.

Ingredients ragi idiyappam

  •  Ragi Flour – 2 cup
  • Rice Flour – 2-3 tablespoon
  • Boiled Water – As per requirement
  • Oil – 2 tablespoon
  • Salt – As per taste

Preparations

  • Firstly, Heat the pan, add ragi flour to it, and roast it on medium heat until the flour turns aromatic. Transfer the roasted flour to the large bowl and keep it aside.
  • Add 1 teaspoon of oil and 1 teaspoon of salt to a container. Bring the water to a rolling boil, then pour it over the flour and stir with a spoon. Add water to the flour and stir to combine.
  • Allow the dough to cool a little. Oil your hands and knead for two minutes. There will be a non-sticky dough created.
  • Now take the idiappam mold and grease it with some oil. This will prevent the dough from sticking to the mold.
  • Let’s make ragi idiyappam by making a cylindrical-shaped dough and placing the dough inside the mold. Keep the remaining dough covered, or it will harden.
  • Tighten the lid and start preparing idiyappam on the greased plate by pressing in a circular motion. Then, stack the plates and place them inside the pot, and steam it for 15 minutes.
  • After that, you can serve ragi idiappam with coconut chutneys, spicy chutneys, etc.

This Ragda Pattice has several health benefits like- This chaat is made by dried peas and paneer. Dried peas (Vatana) and paneer are rich in protein.   • For Ragda curry-
  • Peas dry – 50 gm
  • Onion – 1/2 cup

  • Coriander mint chutney – 1 tbsp
  • Coriander leaves for garnishing
  • Tamarind dates chutney (optional) -1 tbsp

  • For Pattice –
  • Paneer – 1/2 cup
  • Boiled potatoes/sweet potatoes – 1/2 cup
  • 1 Carrot grated
  • 1/2 Beetroot grated
  • 1 Small Onion finely chopped
  • Green chili – adjust to taste
  • Salt to taste
  • Coriander powder
  • Bread crumbs – 1 bread
  • Oil- 1 tbsp

Method:-

  • First of all, wash the dried peas thoroughly and let it soak for at least 5-6 hours or overnight.
  • In the morning drain the soaked peas, wash it well. Now take all the peas in cooker, add salt and turmeric powder. Let it boil with 4-5 whistles.

Cooking Method:-

  • For ragda curry– once the peas are nicely boiled, smashed it by spatula. Add some chopped green chilli, 1/2 chopped onions, 1/2 chopped tomato, 1tsp mint chutney and 2 tbsp chopped coriander leaves. Now, let all the mixture together for more 4-5 min without covering.
  • Now, Take a large bowl. Add boiled and smashed sweet potatoes/potatoes in the bowl. Now add grated paneer, all the finely chopped and grated veggies, bread crumbs and salt to your taste. Now mix well all together and make a shape of patties or tikki with the help of oil.
  • Heat some little amount of oil in non-stick pan. Slighly roast all the patties on a medium flame. Flip and roast patties from both the sides equally. And turn off the flame.
    • For Plating – Take your patties into a plate. Then, add peas curry, curd, some onions, mint and tamarind chutney, chaat masala and garnish it with fresh coriander leaves.

  15. Oil 1tbsp
  16. Green chutney 1 tsp
  17. Garlic chutney 1 tsp

Procedure:-

1. Firstly, in a mixer jar take 1½ cup besan, ¼ cup rava, ¼ cup curd.

2. Add turmeric and ¾ tsp salt add 1 cup water and blend to smooth batter.

3. pour the batter into a large bowl and rest for 10 minutes.

4. Heat the dosa pan and pour the chilla batter

5. Spread as thin as possible

6. Once the chilla is cooked from the top, spread 1 tsp oil.

7. Spread 1 tsp Green chutney and garlic chutney over the chilla

8. Add Paneer, carrot ,tomatoes,capsicium sweet corns,coriander

9.Add Grated cheese ,salt and peri peri masala over the dressing

10.Now spread the stuffing Uniformly and cook for sometime.

11.Roll the chilla tight keeping the stuffing intact.
