  • Garlic 1 bulb

  • Bay leaf 1

  • Tomato puree 1/2 cup
  • Fresh basil leaves 10-12 + to garnish
  • Crushed black peppercorns to taste

How to prepare garlic tomato soup?

  1. First cut tomatoes into big pieces.  Then cut off a thin slice from the bottom of the garlic bulb.
  2. After that keep bowler tray pur drizzle some olive oil and sprinkle salt over it, place  tomatoes the bowl in a hot oven and roast till well browned.
  3.  Then Heat 2 tbsps olive oil in a non-stick pan, add  chopped onion,  chopped tomatoes, chopped  bay leaf and salt and mix it well and saute it .Till it properly cooked.
  4. Peel some of the garlic cloves and add to the pan, add the remaining bulb as it is.
  5.  Then add thyme and 1 cup water and let it cook.
  6. Add tomato puree and mix.
  7. Then  Add basil leaves, crushed peppercorns and mix. Cover and cook for 10 minutes or till the tomatoes become soft.
  8. When it Cool  down then grind it to a puree with a little water. Pour the strained stock and the puree into the pan. Adjust salt and bring it to a boil.
  9. Finally pour the soup into soup bowls and serve piping hot garnished with basil leaves or basil oil.

  • 2 washed & dried red bell pepper
  • 230 gm crushed paneer
  • 1 teaspoon roasted cumin powder
  • ¼ cup carrot
  • ¼ cup cauliflower
  • 1/4 cup peas
  • 1/2 cup grated low fat mozzarella cheese
  • 3/4 teaspoon pav bhaji masala
  • 1/4 teaspoon garam masala powder
  • gm salt
  • 2 washed & dried yellow bell pepper
  • 2 medium chopped onion
  • 3 medium boiled,mashed,peeled potato
  • 1/4 teaspoon sugar
  • 1/2 tablespoon vegetable oil
  • 1 teaspoon kashmiri red chilli
  • 2 chopped green chillies
  • 1 teaspoon powdered black pepper

How to prepare cheese stuffed bell peppers?

1)First, preheat the oven to 200C. Then Slice off the uppermost part of the bell peppers and de-seed them.

2) Secondly brush the bell pepper with oil and keep them aside for a while.

3) Take a non-stick pan heat some oil, add onions and saute them until they turn translucent and golden brown in color.

3) Then add massed potatoes, mashed paneer, chopped peas, chopped carrot, chopped cauliflower Kashmiri mirch, garam masala, black pepper, salt, sugar, pav bhaji masala, green chillies and roasted cumin powder. Mix them well and then stir fry for 8mins on medium flame to get a dry mixture.

4) Once the filling is ready turn off the gas flame and then stuff the bell peppers with this filling. Sprinkle mozzarella cheese on the top of this filling.

5) Grease a baking tray with oil and then place the stuffed bell peppers. Them bake it for about 20 mins.

6)After that if the outer skin of the bell peppers has turned wrinkled and cooked proper from each side.

7) Finally sprinkle oregano or chili flakes on the top and Your Cheesy Stuffed Capsicum is ready to serve.

  • Firstly, mix all the spice powders in a bowl such as chili powder, turmeric powder, garam masala, coriander powder, cumin powder, ginger, garlic, and salt.
  • Secondly, add lemon juice to make a paste. Next, cut the curry leaves into two and add this to the paste (do not make a paste of curry leaves).
  • Now, apply this to the fish and keep it aside at least for 1 hour.
  • Lastly, heat the grill pan and grill the fish till it is cooked.

  • 2 medium tomatoes
  • coconut oil, or ghee for frying
  • 2 small onions, finely chopped
  • 2 large garlic cloves, finely chopped
  • / 2 tablespone of ginger, peeled and diced finely
  • 1 tsp black mustard seeds
  • 24 curry leaves, fresh or dried
  • ½ tsp fenugreek seeds
  • ½ tsp turmeric
  • 1½-2 tsp hot chilli powder
  • 2 tsp ground coriander
  • ½-1 tbsp tamarind paste
  • l / 1 cup full fat coconut milk
  • ½ small cauliflower, divided into florets
  • a handful of green flat beans, sliced thinly, on the diagonal
  • 50 g resh spinach
  • 1 cup cooked chickpeas
  • approx. ¾ tsp fine sea salt,
  • 2 tsp coconut
  • 1 tablespone of toasted cashews,

How to prepare malaburry curry?

  1. Firstly peel your tomatoes and chopped roughly and blend it will form a smooth paste.
  2.  Secondly that take a heat up 3 tbsp of oil in a large frying. Once the oil is hot, put mustard seeds, curry leaves, fenugreek seeds and ginger. Stir-fry for a few seconds.
  3. Then add diced garlic and onion to the pan. Fry gently until onion softens and turns dark golden.
  4.  Then add all the dry spices to the pan and mix it well.
  5. Now add tomatoes paste to the pan.
  6.  Also add tamarind puree to the curry. For the good taste.
  7. Then after few minute oil come out of pure  the add salt according to your taste.
  8. Add about ¼ cup of water to the sauce and put cauliflower florets in the sauce. Cover with a lid and simmer for about 3 minutes and add sliced green beans and cook for further 2 minutes.
  9. Then add coconut milk and allow the sauce to come to a simmer again.
  10. Finally drop in cooked chickpeas and fresh spinach. Allow spinach to wilt into the sauce. Check and adjust the seasoning.
  11. In a small pan, heat 1 tablespoon of oil to temper the spices. Add remaining mustard seeds and curry leaves to the hot oil and fry for about 10 then tip tempered spices into the curry.
  12. Then toasted cashews and fresh coriander.
  13. Finally serve the malabari curry dish with rice.

How to Make Besan Ki Sabji

Step 1: Gattas preparation

The first step is to put water to a boil, Approx 2-3 mugs. While the water is boiling, lets make the gattas dough. To make guttas dough, take besan 3-4 tablespoons, curd and some water. Add ginger garlic paste to it and add salt, red chilly powder & dhania powder as per taste. Mix the dough to make a firm dough ball.

Now roll the dough into long dough logs like hot dogs and add the same to boiled water in a pressure cooker. Cook the same for about 10-12 mins.

Step 2: Masala curry preparation for Besan ki Sabji

While the gattas are getting cooked, lets make the gravy for sabji. Take 2 tablespoons oil in a kadhai, and sautee finely chopped onion, tomatoes with some ginger and garlic paste. Now after the mixture is cooked, add some haldi, garam masala, dhania powder, chilly powder, salt to taste and Kasuri methi for flavors. Once the mixture is ready. Take the gattas out on a plate and cut them into small pieces.

Do not throw the water in which gattas were boiled. Add the cut peices of gatte or gattas into the gravy mix and let the flavours infuse into the same. After 3-4 mins add the water used in the boiling of the gatte, and mix them all. Let the mixture cook for sometime and let the gravy have a thick consistency.

Garnish the same with fresh coriander. Best served with tandoori roti, naan or flatbreads.

  7. When the eggplant pulp and mushroom are tender about 10 minutes or so.
  8. Then sprinkle in parmesan cheese and the breadcrumbs.
  9. After that turn oven down to 350°F Remove eggplant shells.Spoon mixture into eggplant shells.
  10. Then mix remaining half of breadcrumbs with melted butter. Sprinkle over filled eggplant.
  11. Then place filled eggplant shells back in the oven bake at 350°F for 20-25 minutes.

  • Cardamom or ilaichi-3-4

Method of preparation:

  • Firstly, rinse rice in water 2-3 times till the water runs clear of starch.
  • Secondly, heat oil in a cooker or thick bottomed deep pot or pan and add the spices such as tej patta, cardamom and saute till the spices splutter.
  • Further, add chopped onions and ginger garlic paste and saute till they become golden brown.
  • Next, add chopped tomatoes and saute them for a minute or two. Also, add chopped potatoes and saute the potatoes for 3 to 4 minutes on a low to medium flame.
  • Now, add chopped french beans, green peas and the cauliflower florets in the cooker or pan and mix them with rest of the ingredients.
  • Next, add chopped coriander leaves, green chilies, red chilli powder, coriander powder, salt and turmeric powder and also mix very well. 
  • Further, add rice and mix the rice with the masala and pour water.
  • Lastly, cover the pan with a tight lid and cook the tehri on medium flame till all the water is absorbed and the rice grains are fluffy and soft. 
  • Once done, remove the cooker or pan from the stove and also let it rest for 5 minutes.
  • Finally, serve this tehri with a raita or plain curd and enjoy it with your loved ones!

  • 1 tablespoon minced garlic

How to prepare stuffed mushroom home?

  1. Firstly Wash the mushrooms lightly to clean them of any dirt, but don’t use too much water. You don’t want them to get soggy.
  2.  Secondly carefully break off the mushroom stems.
  3.  After that Set mushroom stem aside and toss them into a vegetable stir-fry.
  4. Pat the mushroom caps dry with a paper towel, and arrange them neatly on a sheet pan with the cap side up.
  5. Heat 6 tablespoons of butter in a small saucepan over low heat until it’s just melted. Remove from the heat.
  6.  Then, use a brush to lightly brush on the mushroom caps with melted butter, turning them over afterward so they are top-side down.
  7. Preheat the oven to 375 degrees F. While the oven is preheating, make the stuffing.
  8.  Now  Stir ½ teaspoon onion powder, ½ teaspoon granulated garlic, 1 teaspoon dried thyme, ½ teaspoon paprika, and ¼ teaspoon salt (or to taste) into the butter until well combined.
  9.  Use a rubber spatula to mix in ¾ cup plain or Italian breadcrumbs until all the breadcrumbs are saturated with butter.
  10. After that add 1/3 cup grated parmesan cheese and 1 tablespoon finely chopped fresh parsley,  for garnishing. Again preheat it.
  11. Finally stuffed chees mushroom is ready to serv.
