How To Make Healthy Sweet Potato and Spinach Bowl

Ingredients

  • 4 sweet potatoes
  • 2 tbsp olive oil
  • 2 ½ tbsp minced garlic
  • 6 cups spinach
  • ½ cup pumpkin seeds
  • 2 ½ tbsp sesame seeds

Instructions:

  • Step 1:
  • Wash sweet potato and prick skin with a fork several times. Place on a damp paper towel and microwave on high 5 to 8 minutes, or until soft and cooked through.
  • Step 2:
  • Meanwhile, in a medium skillet, heat olive oil over medium heat until glistening. Add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, 1 minute more.
  • Step 3:
  • Remove sweet potato from skins (making sure it is cool to the touch) and add to a bowl. Mash well with a fork.
  • Step 4:
  • Top sweet potato with spinach, pumpkin seeds, sesame seeds and salt and pepper to taste.
