🥞 Healthy Almond Banana Pancakes
🌿 Ingredients (Serves 2–3)
- 1 ripe banana (mashed)
- 1 cup almond flour (or finely ground almonds)
- 2 tbsp whole wheat flour (or oat flour for gluten-free)
- 1 tsp baking powder
- ¼ tsp cinnamon (optional)
- Pinch of salt
- ¾ cup milk (dairy or almond milk)
- 1 tsp vanilla extract (optional)
- 1 tsp honey or maple syrup (optional)
- 1–2 tsp olive oil or ghee (for cooking)
👩🍳 Instructions
- Mash banana in a bowl until smooth.
- Add milk, vanilla, and honey. Mix well.
- In another bowl, combine almond flour, whole wheat flour, baking powder, cinnamon, and salt.
- Gradually mix dry ingredients into wet ingredients.
→ Batter should be thick but pourable (add 1–2 tbsp milk if too thick).
- Heat a non-stick pan on low–medium and lightly grease it.
- Pour small ladlefuls of batter and cook 2–3 minutes until bubbles form.
- Flip gently and cook another 1–2 minutes.
- Serve warm.
