Ingredients:
- ½ cup roasted chickpeas (or canned, drained)
- ½ small sweet potato (cubed, roasted or microwaved)
- 1 tbsp olive oil
- ½ tsp paprika or cumin
- 1 cup spinach or kale
- 1 tbsp lemon juice
Instructions:
- Toss chickpeas and sweet potato in olive oil and spices.
- Roast in an air fryer or oven (or pan-fry for 5 min).
