How to make Keto Samosa ?

Keto samosa !! yes you heard it correct, Samosas can be fit into keto recipes too. Samosa is everyone’s favorite go to dish. The freshly cooked veggie center folded in a thin-crusted pastry always turns out to be what you expect: delightful. But since the traditional samosa wrapper and potato filling don’t cut it on a low-carb diet, we have been experimenting to come up with a rivaling low-carb version. In this recipe we used a keto-friendly dough–One that’s reliable and foolproof. This keto samosa contains only 5gm Carbohydrate.

Ingredients

For the filling:

  • 1 tablespoon butter
  • 200gm cauliflower finely chopped Or you can use minced Chicken/Mutton qeema
  • 1 medium onion 
  • Salt as per taste
  • 1 tablespoon fresh grated ginger or you can use ginger paste
  • 1/2 teaspoon coriander ground
  • 1 teaspoon garam masala ground
  • 1 teaspoon cumin ground
  • 1/4 teaspoon cumin seeds whole
  • 1/8-1/4 teaspoon red chili flakes
  • 1/4 cup fresh coriander chopped

For the dough:

  • 3/4 cup super fine almond flour
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 250gm mozzarella cheese finely shredded

* TIP – You can also use ready made keto tortilla for the outer covering.

Method of cooking keto samosa

For the filling:

  1. Preheat a large skillet over medium heat. Add butter. When butter has melted and stopped foaming, add the cauliflower/Chicken and onions.
  2. Sprinkle the salt over the vegetables. Cook, stirring occasionally, until the edges have started to brown and the vegetables are cooked through. 
  3. Stir in ginger, coriander, garam masala, ground cumin, cumin seeds, and chili flakes. Stir for 1-2 minutes to allow the spices to toast. Turn off the heat.
  4. Stir in the coriander. Taste and adjust seasoning. Add salt to taste.

For the dough:

  1. Set up a double boiler. Can use a large sauce pan with about 1 1/2-2 inches of water in it and a medium mixing bowl that fits on top.
  2. Bring the water in the lower part of the double boiler to a simmer over high heat. Once it is simmering, turn heat to low. 
  3. Meanwhile, place the almond flour, cumin, salt, and mozzarella in the top part of the double boiler. Stir together. 
  4. Stirring the mixture constantly, heat until the mozzarella cheese melts and the mixture forms a dough.
  5. Turn the dough out onto one of the pieces of parchment and knead a few times to equally distribute the ingredients. Shape the dough into a small bowls (peda) and make a roti out of it.
  6. Cut that roti into half and keep aside.

To assemble:

  1. Spoon the filling onto the center of each semi circle roti, Fold it like samosa and keep on parchment paper.
  2. Make fork holes in each samosa to provide a place for steam to release. Bake in a preheated oven for 14-17 minutes or until golden brown or Air Fry them for 15 mins.

  • 250 gm Paneer (Grate it finely)
  • 1 Finely Chopped Onion
  • 2-3 tbsp Almond flour

  • 1 tsp Garam Masala
  • 1 tsp Coriander Powder
  • Salt to Taste
  • 5 Cloves of Chopped Garlic
  • 2 Finely Chopped Green Chilies
  • 30 gm Grated Cheese
  • 2 tsp Ghee or unsalted Butter

METHOD

  1. Take a mixing bowl with paneer in it. Then, add the turmeric powder, garam masala, coriander powder, and salt.
  2. Now, add the chopped garlic. Now, mix and mash it thoroughly.
  3. Thereafter, include the finely chopped onions, to the paneer cutlet mixture.
  4. The grated cheese and finely chopped green chilies, are to be added to the above dough.
  5. To provide a better binding capacity to the cutlets, add almond flour to the dough.
  6. Prepare 7-9 medium-sized balls out of the final mixture. You can flat them into a patty or any other shape of cutlet.
  7. Now whisk the egg in a separate plate and egg wash all the patties.
  8. In a pan, melt & heat butter/ghee, fry the paneer cutlets. Fry them on a medium flame until they turn golden brown.

Tip– Almond flour can be added a little more, if you find the dough wet or loose.

So, here we are giving you the recipe for keto-friendly Pav Bhaji which is very much tasty and will not let your diet get disturbed. We will prepare it in such a way that you don’t have to compromise on its taste and also you will get health benefits from it. You have to strictly follow the ingredients and quantity which are mentioned in the recipe to avoid additional carbohydrate intake.

Ingredients for Keto Pav-Bhaji :

  • Tomato puree – 200 gm
  • Onion chopped – 1 big (200 gm)
  • Capsicum chopped – 100 gm
  • Cauliflower grated – 100 gm
  • Garlic paste – 2 tbsp
  • Ginger paste – 1 tbsp
  • Amul butter – 30 gm
  • Sunflower oil – 1.5 tbsp
  • Red chili paste –as per taste
  • Garam masala – 1 tsp
  • Pav Bhaji masala – 2 tsp
  • Grated cheese – 150 gm
  • Salt – as per taste

Method:

Firstly, heat oil in a pan and add ginger paste and garlic paste. Stir them until they are roasted well.

Then we will add red chili paste and 20gm butter and mix them well.

After that add onion, and capsicum and let them cook well.

Then we will add cauliflower, which is a substitute for potato, and give the same consistency and taste as the potato.

Now, add 10 gm butter and some water, close the lid and let them cook well.

Then, we will add tomato puree, pav bhaji masala, garam masala, and salt and let them cook properly.

After that, we will add cheese for increasing the protein content of pav bhaji.

Now, add water to adjust the consistency you want and cook it properly.

Finally, your keto-friendly pav bhaji is ready. Garnish it with coriander leaves and serve it with almond flour pav.

INGREDIENTS

  1. 500gm Chicken without skin
  2. 2 tbsp Ginger Garlic Paste
  3. 1 tbsp Corriander chutney
  4. 2 Lemons
  5. 250gm Hung curd or Greek Yogurt
  6. 2 tsp Crushed Black pepper powder
  7. Black salt as per taste
  8. 1/2 lemon zest
  9. 2 tsp chaat masala
  10. 4 tbsp Butter
  11. 3 tbsp Cream
  12. 1 tsp kasoori methi

METHOD OF COOKING

STEP 1 – Take a Bowl and marinate chicken with ginger garlic paste, coriander chutney, Lemon juice and keep aside for 30 minutes.

STEP 2 – Take another bowl and add Hung Curd or Greek Yogurt, put some black pepper, black salt, lemon zest, chat masala in it. Mix all together and add already marinated chicken in this bowl. Keep asied for 10-15 mins.

STEP 3 – Heat 4 tbsp of butter and add the marinated chicken in it. Let it simmer for 30-35 minutes. Add 3 tbsp cream, 1 tsp kasoori methi (optional), Black pepper in it and mix thoroughly. And serve hot

  • 1 cup Greek yoghurt or Hung Curd
  • One small onion
  • Few curry leaves
  • 1/4 teaspoon cumin seeds
  • 1 teaspoon cumin powder
  • salt as required

  • 1 teaspoon mustard seeds

Method

  1. Step 1 – Pour curd in a large bowl and whisk properly. Add salt as per taste and whisk well. Now add cumin powder and mix well.
  2. Step 2 – Prepare the tempering Heat oil in a pan. Now add asafoetida, cumin seeds, mustard seeds, curry leaves and sauté for a minute. And add chopped onion, sauté it till translucent.

  • 1 tsp turmeric
  • 25 gm bottle gourd
  • 1 medium size onion
  • 25 gm zucchini
  • 1 pepper
  • 10 curry leaves
  • 2  tbsp. desiccated coconut (optional- depending on the availability)
  • 1 tsp coriander powder
  • 1 and a half  cup of water
  • One  green chili or red chilly powder according to taste
  • 1  tbsp oil
  • 1  tsp. mustard seeds
  • ¼ tsp. asafoetida (if available)
  • Salt as per taste
  • Coriander or cilantro leaves for garnishing

METHOD FOR MAKING KETO SAMBAR

  • Slice and dice the vegetables and set aside together in a bowl.
  •  Mix together the coconut and coriander powder, along with the turmeric and red chilly powder.
  •  Place a Pan over a medium-low heat setting and add oil to it.
  • Now, add mustard seeds to the hot oil. And add some dried red chilies and curry leaves.
  •  Once the mustard seeds stop sputtering, add the sliced and diced veggies and green chilies. Saute for about 1 minute on medium flame. Cook till mushy and well cooked.
  • Next, add asafoetida, coconut-coriander powder, and water to the mixture. Turn on the heat and bring to a boil.
  • Add salt and mix thoroughly.
  •  Garnish with cilantro or coriander leaves before serving.

  1. Carbohydrates – 1.5 grams
  2. Fat – 3.5 grams
  3. Fiber – 0 grams

INGREDIENTS:

INGREDIENTS:

  • 25 grams Coriander
  • 25 grams Fresh Mint Leaves
  • 5 grams Ginger
  • 5 grams garlic
  • 1 Green Chilli
  • 1/4 Tsp Salt
  •  lime juice to taste

Green Yogurt Chutney

  • 1 Tbsp Full Fat Greek Yogurt
  • 1 Tbsp Keto Chutney
  • 1/4 Tsp Chaat Masala

METHOD:

  1. In a food processor add all the ingredients and blend together. Your basic chutney is ready now.
  2. For the yogurt version mix all the ingredients together in a bowl. It’s ready.

  • ½ cup shredded coconut (fresh or frozen)
  • ½ inch ginger
  • 1 green chillies
  • salt to taste
  • little water for grinding

3. Tomato Chutney

Kasundi: Eastern Indian Tomato Chutney Recipe

INGREDIENTS:

  • A dash of extra virgin olive oil
  • 1 medium onion diced
  • 1 teaspoons minced garlic
  • 250 gms diced tinned tomato OR Fresh Tomatoes
  • ¼ cup white vinegar or ACV – apple cider vinegar
  • 1 teaspoon minced ginger
  • 1 teaspoon minced chili or ½ teaspoon chili powder. Add to taste
  • ½ teaspoon cumin powder
  • A pinch of cloves
  • 1-2 tablespoons monk fruit blend or sweetener of choice. Sweeten to taste
  • salt and pepper to taste

METHOD:

  • Heat the oil in a medium sized sauce pan and saute the onion and the garlic until translucent, taking care not to brown.
  • Add the diced tomato, vinegar and ginger, chives, cloves, minced or powdered chili and cumin powder to the pan.
  • Add 1-2 tablespoons of monk fruit blend or sweetener of choice (or to taste) to the tomato mixture. Simmer sauce gently for about 35-45 minutes or until the liquid reduces and the chutney thickens. Season with salt and pepper to taste.
  • Allow to cool and pour into sterilized glass jars to store in the fridge, or use suitable containers to store in the freezer.

4. Keto Peanut Chutney

INGREDIENTS:

  • 3/4 cup peanuts
  • 4 green chilies – adjust to preference for spice level
  • 1 inch ginger
  • 5 curry leaves
  • 1/4 tsp lemon juice
  • 1/8 tsp salt – adjust to taste

METHOD:

  1. Add peanuts, green chilies, ginger, curry leaves, lemon juice, and salt to blender bowl.
  2. Blend until coarse powder. Then add 2 tbsp of water and grind it to a smooth paste.

  • 250 grams Onions and Cauliflower (Cut as per your preference) You can also use Paneer to make the Keto pakora
  • 2 Egg
  • 1 cup Almond flour
  • 2 Tsp Kasuri Meth/Dried Fenugreek Leaves 
  • 2 Tsp Kashmiri Red Chilli Powder
  • 1/2 Tsp Turmeric 
  • 1/4 Tsp Garam Masala Powder 
  • Chopped green chillies few
  • Chopped corriander/cilantro 1/2cup
  •  Salt to Taste
  •  Oil for Deep Frying

METHOD OF PREPARING KETO PAKORA

  1. Mix the half the kashmiri chilli powder with the half tumeric, all the garam masala and some salt (about 1/2 tsp) and mix it all to create a dry rub.
  2. Individually dab the Vegetable pieces in the spice mix and coat well. Else mix all of it together in a bowl so the paneer is well coated.
  3. To make the batter crack the eggs in a bowl and mix with some salt, the rest of the chilli powder and turmeric, kasuri methi, green chillies, corriander and mix well. Then add in the Almond flour one by one at a time till the mixture is nice and thick like a batter.
  4. Dip the Onions and Cauliflower in the batter and then deep fry. Cook till the batter is nice and golden brown.
  5. Your Pakoras are ready to serve.
  6. Serve them hot and with some Keto green chutney Or Keto Sauce

  4. Then ,cut down the pieces in the pan
  5. Afterward add salt, black pepper and mix well .

4.Kadhai creamy chicken

  • 250gm chicken
  • 1 sliced onion
  • 1 sliced capsicum
  • 1 Finely chopped tomato
  • 2 Tbsp butter
  • 2 Tbsp cream
  • 1 Tsp black pepper powder
  • Salt as per taste
  • 1 tbsp sesame seeds

Method

  1. Firstly, Heat butter in pan /kadhai
  2. Secondly, add all veggies in it and sauté for 5 mins.
  3. Then, add cream and chicken in kadhai, cover it with lid for 10 min garnish with seeds on top.
  4. Finally your creamy sautéed chicken is ready to serve .

Tips

Additionally, try use non stick pan/kadhai for these recipes .
