Talking about salads, one of my favourite vegetables for salad is cucumber. cucumbers are so fresh and juicy. They are not only healthy but also a great source of hydration. The amount of water that cucumber holds is high and that makes it an amazing choice for salads. Here is cucumber dill salad recipe for you.

Even on a normal day, cucumber can make your salads interesting. It adds juiciness and crunch to your plate. Why are cucumbers considered as healthy?

Well they are very low on calories, high in fibre, contain zero fats and very low in sodium. They are a good source of potassium. They are also low on carbohydrates. Cucumbers are also a decent source of phosphorus and magnesium. 

Apart from cucumbers, we have dill leaves. Commonly known as soya leaves. Combination of cucumber and dill is not only healthy but also very tasty. Dill leaves are a rich source of vitamin C. and not only vitamin C, they are loaded with other nutrients like calcium, magnesium, potassium, iron and manganese.

  • Pour the vinegar over cucumber and chill it for 10 minutes.

It might take some time to prepare this recipe, but I bet that the end dish will be worth all the wait and efforts.

Total time: 1 hour 40 minutes

Serving: 5-6 

Ingredients to make Cuban roast chicken with rum and ginger

Chicken- 1 whole

Cloves: ½ tsp (powdered)

Cinnamon : ½ tsp  (powdered)

Black Pepper:1 tsp  (powdered)

Ginger: ½ tsp  (powdered)

Salt: as per taste

Oil: 2 tsp

Onions: 3 (sliced)

Garlic: 5-6 cloves (chopped)

Honey: ¼ cup

Brown sugar: ¼ cup

Dark rum: ¼ cup

Vinegar: 3 tablespoons

Chicken broth: ½ cup

Method of preparation:

  • Firstly, set the oven at 350 F.
  • Meanwhile, rinse the chicken and pat dry.
  • Now, in a small bowl, add all the spices, cloves, cinnamon, black pepper, ginger and salt. Rub this spice mixture all over the chicken, inside out. Now, tie the legs of chicken together and set aside.
  • Now, in a large pan, heat oil over medium to low flame. Add onions and garlic and cook while stirring for about 8-10 minutes, until the onions are soft. Once cooked, place the chicken over the onions.
  • Furthermore, in a small bowl, add honey, brown sugar, rum and vinegar. Mix them well to prepare the glaze. 
  • Drizzle half of the glaze over the chicken. And once done, pour in the chicken broth over the chicken in the pan. 
  • Now, roast the chicken in the oven for about 30 minutes. Once done, drizzle the remaining glaze over the chicken and roast for another 30 minutes.
  • Baste the chicken with the pan juices and roast for another 30 minutes.
  • Rest for 10 minutes before carving.

Tip: when serving, carve the chicken and serve with a spoonful of onion to the side!

  • 1 tablespoon Gram flour

  • 1 inch Ginger, finely chopped
  • 1/4 teaspoon hing
  • 1/2 teaspoon Cumin seeds J
  • 2 tablespoons Fresh coconut, grated
  • 1 teaspoon Cardamom Powder
  • Oil, for making cutlets
  • ¼ cup carrot grated
  • ¼ cup French beans  boiled  and mashed in the form past
  • ¼ Cup of onion

How to make Chana Dal Cutlet Recipe?

1)Firstly to begin making the Chana Dal wash the chana dal and soak in water for 3hour

2) Secondly take a pressure cooker and add the chana dal and water, cook for 2 to 3 whistles.

3)After that when  it is cooked strain the water from the chana dal  make it cool down and make a dry fine paste using a mixer grinder.

4) Then take a pan Heat a teaspoon of oil and temper with cumin seeds,   hing and add onion, carrots sauté it for about 10 seconds.  Also see the colour of onion change into golden brown.

5) Now add ginger, coconut, red chilli powder, cardamom powder. Sauté for a few seconds.

6) After that add the Chana dal paste, boiled mashed potatoes, besan, coriander leaves, mint leaves and chaat masala. Also French beans paste. Now stir fry the dal mixture for about 2 to 3 minutes on medium to low flame until it thickens.

7) Once it thickens, turn off the heat.

8) Next, make flat thick medium balls and refrigerate the Chana dal cutlet for about 15 minutes.

 11) After that heat a frying pan or in with oil and fry the Chana dal cutlet from both side for 5 minutes each or till they turn golden brown in colour. Also make sure you fry on low to medium heat to get a perfect crispness.

12) Once done, take the Chana dal cutlet out on a kitchen towel to absorb the excess oil. Serve hot.

13) Finally serve Chana Dal Cutlet along with pudina chutney and a cup of masala Chai or Filter Coffee for evening snacks.

  4. Then add cauliflower, green beans, and vegetable broth in the pan and stair it till it reached it to boiling point. Then turn heat down to a simmer.
  5. Now add vegetables till time it cooked   it properly till the time barely tender, about 5 minutes.  After that add Season with salt and pepper according to the taste.
  6. After that in a small bowl, mix the corn-starch, soy sauce, and 1/4 cup water until corn-starch is completely dissolve in it.
  7. Now add it into mixture Stir into vegetables, and cook until it become thickens, about 5 minutes.
  8.  Now Roll out of the dough to line an inch baking dish.
  9. Pour the filling into the pastry lined dish. Roll out remaining dough, arrange over the filling, and seal and flute the edges.

  • Firstly, in a deep non-stick pan, boil enough water and add macaroni along with salt and a few drops of oil. Cook for over 8 minutes and check if the macaroni is cooked. When cooked, drain and set aside.
  • Meanwhile the macaroni is cooking, finely chop the vegetables. 
  • Heat oil in a pan over medium flame and add ginger garlic paste to it. Add onions and capsicum and sauté. Once the onions and capsicum are cooked, add tomato to it. Mix well.
  • Moreover, add tomato ketchup, salt, chilli powder and oregano to the pan and mix well. 
  • Once the masala is cooked, add boiled and drained macaroni to the pan.
  • Mix well and make sure to coat the masala well on the macaroni. 
  • Finally, turn off the flame and serve the macaroni hot!
