  • Oats-1/2 cup
  • Besan-1/2 cup
  • Water, as needed
  • Turmeric-1/4 tsp
  • Ginger-garlic paste-1 tsp
  • Green chilli, finely chopped-2
  • Jeera powder-1/2 tsp
  • Onion, finely chopped-1/4 cup
  • Tomato, finely chopped-1/4 tsp
  • Salt, to taste
  • Oil-2 tbsp

Method of preparation:

  • Firstly, take oats in a mixer or grinder and grind to a fine powder and take it out in a mixing bowl and add besan flour in it.
  • Secondly, add turmeric, ginger-garlic paste, green chili, jeera powder, salt, onion, tomato and water and mix well forming thick flowing consistency chilla batter.
  • Further, heat a tawa or a flat pan on a low flame and then spread a bit of oil on the tawa. Let the pan become medium hot. Then take a ladle full of the batter and pour on the pan.
  • Also, begin to spread the batter gently with the ladle so that the cheela does not break and cook the cheela till it is golden brown from one side then flip the cheela and cook both sides pressing gently.
  • Finally, serve this hot oats chilla with mint-coriander chutney.

For tempering of dhokla:

  • Oil-1 tsp

  • Sugar-2 tsp

  • Curry leaves-7-8
  • Green chili (whole)-3-4
  • Water-1/2 cup

Method of preparation:

  • Firstly, mix suji, curd and green chilli-ginger paste in a mixing bowl and keep aside for 15 minutes.
  • Secondly, after 15 minutes of resting, add salt, lemon juice, Eno powder and water as needed to make a thick consistency batter.
  • Meanwhile, boil water in a steamer or cooker side by side.
  • Next, brush a flat base vessel that would fit into your steamer or cooker and pour the prepared batter into it.
  • Now, keep the base inside and cook for at least 20 minutes or until the knife inserted the dhokla comes out clean.
  • Meanwhile, prepare your tempering for the dhokla. For the tempering, heat a kadai with oil, splutter mustard seeds and add curry leaves, green chili and let it crisp and then add water, sugar, salt and lemon juice and stir well and keep it aside.
  • Further, once the dhokla is cooked then remove it from the stove and let the dhokla cool down. Next, invert over a plate and tap gently to loosen the dhokla sides.
  • Lastly, cut the dhokla into squares and pour over the tempering all over the dhokla.
  • Finally, serve this suji instant dhokla with green chutney!

  • Now, form the kofta of the desired size with your hands one by one and set it on a plate.
  • Next, for pan frying kofta, heat 1 tbsp. oil on the pan and cook the kofta by moving them around till they are brown in color. And for baking kofta, preheat oven to 200 C or 390 F for few minutes and meanwhile brush your kofta and the baking tray with a little oil then bake for about 15-20 minutes till they are done and light brown color.
  • Now, for the gravy, take a pan and heat oil in it and add onion, garlic-ginger paste and saute for 2-3 minutes and then add tomato puree, cumin and coriander powder in the pan.
  • Furthermore, add red chilli and garam masala and keep cooking until the oil and masala separate from each other.
  • Next, add curd to the masala in the pan and add some water to make a gravy and let it simmer over low heat to turn it into a thick gravy.

  3. Meanwhile, prepare the dough by adding rice flour/wheat flour, water and salt and knead it finely as well as evenly.
  4. Now, make thick puri out of the dough and add the dal paste on one side of the puri and fold it to the other side.
  5. Now, put the steamer or the cooker filled water on the stove and steam the fara about 20 to 30 minutes. After 20 to 30 minutes, when it is cooked, switch off the stove and allow the fara to cool down.
  6. Furthermore, for tempering, heat oil in a kadhai/wok and add jeera, curry leaves and hing. Let the jeera crackle and then add fara and also stir for a bit and garnish them with fresh coriander.

  • Secondly, take a spoonful mixture in your hands and knead into a soft long cylindrical balls. Repeat the process for each muthia.
  • Furthermore, for steaming, place these balls in a steamer, or a metal colander which can be placed into a bigger saucepan with water in it. Steam for 20-25 minutes. Now, after a good steaming, remove the muthias from the stove and also slice them into 2-3 pieces.
  • Lastly, take a pan and pour some oil in it. Next, add curry leaves, green chilli, mustard seeds, sesame seeds and roast them for 30 seconds. And then add the sliced muthias in the pan and mix them well.
