A delicious Spanish omelet is simply irresistible. It is a thick, fluffy omelette made using potatoes, onions and eggs. There’s nothing too fancy about this Spanish style omelette but just lots of hearty goodness from crispy fried potatoes and onions.

Ingredients for Spanish Omelet:

  • Olive oil-1/4 cup
  • Potatoes, medium-sized diced into 1-inch pieces-2
  • Onion, chopped-1
  • Eggs-4
  • Salt, to taste
  • Black pepper powder, to taste
  • Coriander leaves, to garnish

Method of preparation:

  • Firstly, heat the oil in a nonstick medium-sized pan. Next, fry potatoes until crispy and golden and add the onion and fry until transparent and drain oil until all of the oil is drained. 
  • Secondly, arrange potatoes and onions in a single layer in the pan reduce heat down to low.
  • Next, beat eggs with salt and pepper and also pour this egg mixture into the pan, moving the potatoes and onions around the eggs using a plastic spatula. (Pro tip: Also, keep in mind to move the eggs around the potatoes and onions while it’s cooking to ensure the eggs cook on the bottom)
  • Now, place a lid on top of the pan, and let it cook and after that flip the omelette onto the plate and keep cooking, gently shaking the pan occasionally, until completely cooked through.
  • Next, to remove the tortilla from the pan, place a clean plate on top of the tortilla and flip again onto the plate.
  • Finally, garnish with coriander leaves and serve hot.
