What are the ingredient need for malabari curry?

  • 2 medium tomatoes
  • coconut oil, or ghee for frying
  • 2 small onions, finely chopped
  • 2 large garlic cloves, finely chopped
  • / 2 tablespone of ginger, peeled and diced finely
  • 1 tsp black mustard seeds
  • 24 curry leaves, fresh or dried
  • ½ tsp fenugreek seeds
  • ½ tsp turmeric
  • 1½-2 tsp hot chilli powder
  • 2 tsp ground coriander
  • ½-1 tbsp tamarind paste
  • l / 1 cup full fat coconut milk
  • ½ small cauliflower, divided into florets
  • a handful of green flat beans, sliced thinly, on the diagonal
  • 50 g resh spinach
  • 1 cup cooked chickpeas
  • approx. ¾ tsp fine sea salt,
  • 2 tsp coconut
  • 1 tablespone of toasted cashews,
  • fresh coriander, to serve

How to prepare malaburry curry?

  1. Firstly peel your tomatoes and chopped roughly and blend it will form a smooth paste.
  2.  Secondly that take a heat up 3 tbsp of oil in a large frying. Once the oil is hot, put mustard seeds, curry leaves, fenugreek seeds and ginger. Stir-fry for a few seconds.
  3. Then add diced garlic and onion to the pan. Fry gently until onion softens and turns dark golden.
  4.  Then add all the dry spices to the pan and mix it well.
  5. Now add tomatoes paste to the pan.
  6.  Also add tamarind puree to the curry. For the good taste.
  7. Then after few minute oil come out of pure  the add salt according to your taste.
  8. Add about ¼ cup of water to the sauce and put cauliflower florets in the sauce. Cover with a lid and simmer for about 3 minutes and add sliced green beans and cook for further 2 minutes.
  9. Then add coconut milk and allow the sauce to come to a simmer again.
  10. Finally drop in cooked chickpeas and fresh spinach. Allow spinach to wilt into the sauce. Check and adjust the seasoning.
  11. In a small pan, heat 1 tablespoon of oil to temper the spices. Add remaining mustard seeds and curry leaves to the hot oil and fry for about 10 then tip tempered spices into the curry.
  12. Then toasted cashews and fresh coriander.
  13. Finally serve the malabari curry dish with rice.

  1.  First wash the cherry tomatoes so that all dirt get washout& cut them into halves.
  2.  Now peel carrots and radish , wash it so that all dirt get removed & cut it into finger sized pieces.
  3. Then clean mint leaves, wash and reserve some leaves for decoration and chop the remaining. Also peel & chop garlic finely. Also Wash red radish & chopped  them small pieces.
  4. Wash lettuce leaves & soak in chilled water. Then peel cucumber and cut into finger sized pieces.
  5. After that hang skimmed milk yogurt in a muslin cloth to remove excess water.  Now  hang curd is ready to serv.
  6. Then sprinkle the sesame seeds lightly .
  7. Then combine thick yogurt with chopped mint, lemon juice, white sesame seeds & garlic. Mix thoroughly. Add salt according to taste and chill.
  8. After that wash the lettuce leaves and spread on a serving plate, arrange the prepared vegetables decoratively and serve with the chilled dressing.

  1. First Preheat the oven to 375°F.
  2.  Secondly halve the eggplant lengthwise.
  3.  Then with a serrated spoon, scoop out pulp of eggplant, leaving about a 1/2″ shell.
  4.  After that place shells on a lightly sprayed cookie sheet and bake in oven for about 15minutes.
  5. While the eggplant shells are in oven, finely chop the eggplant pulp.

  10. Then mix remaining half of breadcrumbs with melted butter. Sprinkle over filled eggplant.
  11. Then place filled eggplant shells back in the oven bake at 350°F for 20-25 minutes.

  6.  Then, use a brush to lightly brush on the mushroom caps with melted butter, turning them over afterward so they are top-side down.
  7. Preheat the oven to 375 degrees F. While the oven is preheating, make the stuffing.
  8.  Now  Stir ½ teaspoon onion powder, ½ teaspoon granulated garlic, 1 teaspoon dried thyme, ½ teaspoon paprika, and ¼ teaspoon salt (or to taste) into the butter until well combined.
  9.  Use a rubber spatula to mix in ¾ cup plain or Italian breadcrumbs until all the breadcrumbs are saturated with butter.
  10. After that add 1/3 cup grated parmesan cheese and 1 tablespoon finely chopped fresh parsley,  for garnishing. Again preheat it.

3. Heat oil in a small pan. Fry the cumin seeds first. Keep the heat to a low. Then add the spice powders – dry ginger powder, hing, and red chili powder. Mix well.

4. After that add the strained tamarind pulp. Cook for 2 to 3 mins.

5. When cooled, store the Tamarind chutney in an air-tight dry jar or container. Refrigerate and serve whenever required.
