Most easy recipe for Oven Roasted Mushrooms and Veggies

Oven Roasted Mushrooms and Veggies – absolutely the easiest way to roast mushrooms, Potatoes, cauliflower, tomatoes and garlic Italian style. Simple and delicious.

I have tried such a simple recipe today. Roasted mushrooms and veggies, that’s it! I roast veggies and When done it really came out so delicious with power of flavours. This time I chose to use delicious mushrooms, Potatoes, cauliflower, and tomatoes.

I also added loads of garlic here they roast very nicely. These oven roasted Mushrooms and veggies taste so heavenly and can be consumed with Bread loafs or Roti or Paratha.

INGREDIENTS

  1. 200g baby potatoes halved
  2. 1 red capsicum
  3. 1 large eggplant/Brinjal
  4. 400g button mushrooms trimmed
  5. 4-5 baby carrots, trimmed
  6. 8-10 Garlic cloves
  7. Olive oil 2 tbs
  8. 1 orange, rind finely grated,
  9. Mustard Sauce 2 tsp
  10. 50gm cheese
  11. 1 Tbsp Italian seasoning
  12. Toasted flaked almonds & chopped parsley, to serve

METHOD OF COOKING

  1. Preheat oven at 230°C for 15mins . Put potatoes into a saucepan and cover with cold water, bring to the boil, boil gently 5 minutes. Drain well
  2. Roast Garlic cloves in olive oil before adding other veggies into the pan.
  3. Cut capsicum and eggplant into 3cm pieces. Place into a roasting pan and add potatoes. Combine mushrooms and carrots in another large roasting pan. Spray all vegetables well with olive oil and season with salt and pepper
  4. Place pan with potatoes on top shelf and mushrooms underneath, roast for 20 minutes, turn all the vegetables and roast a further 15 minutes, or until golden and tender
  5. Transfer all vegetables to a large platter. Whisk olive oil, orange rind, mustard, italian seasoning and salt and pepper together, then pour over the roasted vegetables. Crumble over cheese. Scatter over almonds and parsley.

RECIPE NOTES:

If you do not have Italian seasoning you can use equal amounts of basil, oregano, rosemary and thyme. This recipe is so easy to make and store! Just refrigerate in an airtight container and it’ll stay fresh for up to a week.

Easy steps recipe of Pudina Soya Chaap

Soya Chaap is a good source of protein and contains all the essential amino acids that our body needs. It is also a good source of dietary fibre and iron. Additionally, soya chaap is low in fat and cholesterol, making it a healthy choice for those who are looking to lose weight or maintain a healthy weight.

INGREDIENTS

  1. Soya chaap – 500 gms
  2. Ginger Garlic 1 tsp
  3. Red chilli powder – 1 tsp
  4. Salt to taste
  5. Jeera Powder – 1 tsp
  6. Cashew nuts 5 to 6
  7. Besan – 1 tsp
  8. Coriander leaves a bunch
  9. Green chillies as per taste
  10. Hung curd – 2 tsp
  11. Garam Masala as per taste
  12. Mustard oil 1 tsp

METHOD

Step 1 Take a bowl, put the Boiled soya chaap in it. Add salt, ginger garlic paste, red chilli paste, lemon juice and mix it well. Keep aside for half an hour.
Step 2 Heat a pan, add oil jeera and cashew nut and cook for a minute. Add besan and cook for another one minute. Turn off the flame.
Step 3 Take a grinder, add coriander leaves, green chillies, hung curd and the cooked besan mixture. Grind it and make a smooth paste.

Step 4 Transfer this mixture into a bowl add chaap, salt, oil, garam masala, ginger garlic paste and mix it well. Put them in skewers and cook it over a non stick pan from both the sides Or bake them for 10 mins in preheated oven.

Serve it hot with chutney of your choice!!

RECIPE NOTES :

If you do not have fresh pudina then you can use pudina /mint powder. You can also bake these soya chaaps in a preheated oven at 250°C for 10 minutes. You can also cook it in a very hot tava on high heat.

Tips:

If you do not have steel skewers then you can use wooden sticks. Place a piece of foil around the gas burner; this will avoid the area from becoming messy.

INGREDIENTS

  1. 250gm Paneer cubes
  2. 1/2 cup Thick Curd
  3. 2 tbsp Milk
  4. 1 tbsp ghee
  5. 2 tsp khash khash (kus kus)
  6. 2 tsp melon seeds
  7. 10 cashews
  8. Finely chopped onion 2
  9. 1/2 white pepper powder (can use black if white is not available)
  10. Salt as per taste
  11. 1 tbsp fresh cream (optional)

METHOD OF PREPARATION

  1. Cook and saute the roughly chopped onion on a pan with 2 tsp of ghee/oil but do not make them brown. When the onion is cooked, switch off flame, remove from heat and allow to cool down to room temperature. Blend into a fine and smooth paste along with Khus Khus, melon seeds and cashew nuts.
  2. Heat ghee in a heavy bottomed pan. Add the above paste and fry it until ghee separates.
  3. Add white or black pepper powder and salt to taste.
  4. Let the flame be slow and add milk. Cook for 2-3 minutes.
  5. Now add the beaten curds and cook for about 2-3 minutes. now add roasted Paneer cubes in the pan.
  6. Cover the lid and cook it for further 5 minutes.
  7. Garnish it with cashew nuts, fresh cream(optional) and finely chopped coriander.

INGREDIENTS  

  • 1 Broccoli cut and separated into small florets
  • 50 gm Paneer cubed (optional)
  • 1 Onion finely chopped
  • One tbsp Ginger Garlic & Green Chili Paste (grind all together)
  • 1 cup Tomato Puree or Finely chopped tomatoes
  • 1½ tsp Red Chili Powder
  • 2 tsp Coriander Powder
  • 1 tsp Turmeric
  • 1½ tsp kitchen king Masala/Garam Masala
  • 1 tsp Kasuri Methi
  • Salt to taste
  • Oil 1.5 tbsp

METHOD

  • Heat oil in a Shallow pan over a medium heat. Add onions and cook until lightly browned.
  • Then add ginger garlic chili paste and saute for a minute until the raw smell vanishes.
  • Now add all spices like coriander powder, red chili powder, turmeric, kitchen king and garam masala.
  • Add the broccoli florets and cook for about 5-7 minutes until slightly crunchy.
  • Mix in the tomato puree and salt stir and cover the lid.
  • Let it cook for further 10-15 minutes.
  • Now add kasuri methi and stir well till the spices gets cooked.
  • Add paneer and cook for 2-3 minutes. (optional)
  • Wait till water gets evaporated.

And your dish is ready to go with any kind of Roti, paratha, Rice, Pulao etc.

  • Wash and clean brinjals. Cut the crowns.
  • Chop into desired size like cubes or slices. I prefer to have round slices of the brinjal.
  • Marinate with salt and spices for 5 minutes
  • Heat oil in a pan.
  • Shallow fry brinjals till they are cooked and soft.
  • In a bowl take curd and beat to smooth with a whisk.
  • Season with salt. Pour in fried brinjals to the curd bowl.

Baghaar

Also called as tadka/chonk .Being an desi food lover, I love the the smell of baghaar, it has a pleasant inviting smell

  • Heat oil in a pan, add mustard seeds and cumin seeds to splutter.
  • Add chopped ginger, red chilli, curry leaves and green chillies.
  • Saute for a minute.
  • Add hing Immediately turn off gas to avoid burning of spices.
  • Add this baghaar to the curd mixture.
  • And mix well.

Garnish & Serve

  • Dahi Baghaar e Baigan is ready. Garnish with chopped coriander leaves and serve. And enjoy this with roti/rice and parathas.

Soya Qeema Matar is a delicious vegetarian qeema recipe made with soya and peas and masalas like red chilli powder, coriander powder and garam masala . This is a superb variant of non veg qeema recipe. Soya chunks are also called as nutri nuggets . You can make curries, pulao and other snacks using soya granules .

Ingredients

  • 1 cup Soy Chunks (Nuggets) , soaked in hot water for 30 min
  • One Onion , finely chopped
  • 1 Green Chillies , finely chopped
  • 1/4 cup Green peas (Matar)
  • 1 tablespoon Oil
  • 1 inch Ginger , finely chopped
  • 4 cloves Garlic , finely chopped
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 tablespoon Red Chilli powder , you can use as per taste
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Garam masala powder
  • Chopped Coriander (Dhania) Leaves , for garnish
  • Salt , to taste

How to make Soya Qeema Matar Recipe

  1. For making the Soya Qeema Matar, soak soya granules or if you are using chunks in hot water for half an hour.
  2. Once soaked, drain soya granules, squeeze the water out slightly from the soya granules and pulse in a mixer grinder once or twice to get a coarse Qeema texture of the soya granules.
  3. Heat a tablespoon of oil in a Pan. Add finely chopped onions, ginger, garlic and green chilies and cook till onions turn soft.
  4. Now add Green peas and cover the lid and cook them for 10-15 mins.
  5. Add in the turmeric powder, red chilli powder, coriander powder, garam masala and salt, mix well cook for about 15 seconds.
  6. Add soya granules mix well, simmer and let it cook for 10 minutes in its own juices. Check the salt and spices and adjust according to taste.
  7. Turn off heat, garnish the Soya Qeema Matar with coriander leaves and transfer to as serving bowl and serve hot.
  8. Serve Soya Qeema Matar with Paratha or Roti, Rice and Boondi Raita a perfect meal.

METHOD OF PREPARATION AND INGREDIENTS FOR MARINARA SAUCE

  • 2 cans stewed tomatoes, Can use 500gm fresh, chopped and Blanched Tomatoes also
  • 1 cup tomato paste
  • 4 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 3 tablespoons olive oil
  • ⅓ cup finely diced onion
  1. Place tomatoes, tomato paste, parsley, garlic, oregano, salt, and pepper in a food processor; blend until smooth.
  2. Heat oil in a large skillet over medium heat. Add onion and cook until slightly softened, about 2 minutes. Stir in blended tomato sauce.
  3. Simmer, stirring occasionally, until thickened, about 30 minutes.

INGREDIENTS AND RECIPE FOR MARINARA CHICKEN

  • 4 boneless skinless chicken breast halves
  • 2 cups sliced fresh mushrooms
  • 3 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon Italian seasoning
  • 2 cup marinara sauce
  • 1/2 cup chicken broth
  1. In a large nonstick skillet put some olive oil and cook chicken over medium heat for 4-6 minutes on each side than remove and keep warm.
  2. In the same skillet, saute the mushrooms, garlic, basil and Italian seasoning until mushrooms are tender. Stir in sauce and broth (optional) . Add chicken; cover and simmer for 20 minutes or until heated through. Serve with pasta.

Yakhni is also soothing for anyone with a cold or a cough and is immensely nutritious, often considered a whole meal in itself. The calcium, magnesium, phosphorous and other minerals from the bones of the chicken are known to boost the immune system as well as being good for joint health.

In this article we will learn how to make a delicious Chicken Yakhani. Lets go on to the recipe !!

INGREDIENTS

  • 500 gm Chicken
  • 2 medium finely sliced Onions
  • 1 cup Thick blended Curd (There should be no lumps)
  • 2 tsp Ginger Garlic Paste
  •  Salt as per taste
  • 2 tsp Black Pepper
  • 1 tsp Garam Masala
  • 2 Black Cardamom or Badi Elaichi
  • 1- inch Cinnamon or Dalchini
  • 750ml – 1 litre Water

METHOD

  • Wash the chicken thoroughly, keep it aside for 30 mins so that excess water can drain out.
  • Heat up the pan on medium flame.
  • Add the chicken and Water cook for 3-4 minutes until colour changes.
  • Now Add the finely chopped onions
  • Add the black cardamom pods, cinnamon sticks, garlic paste, and ginger paste then simmer for 5-10 minutes
  • Add the salt, black pepper, garam masala then cook the spices for 5-6 minutes
  • Mix and then cover and cook for 1 hour on medium heat
  • Serve immediately and enjoy!
